Grilled or roasted until caramelized at the edges, rakija-marinated meat is a festive take on the Balkan barbecue tradition. Serve it with roasted peppers, crusty bread, and a cold glass of something fizzy.

  1. Combine the rakija, garlic, salt, pepper, paprika, oil, thyme, bay leaf, and onion in a bowl.
  2. Add the pork and toss to coat; marinate in the refrigerator for at least 2 hours, ideally overnight.
  3. Remove the meat from the marinade, pat dry, and let it come to room temperature.
  4. Grill over medium-high heat, turning, for 25-35 minutes until charred and cooked through.
