Ravioli - homemade ricotta and spinach ravioli in sage brown butter

Ravioli are tender little pasta pillows with a surprise inside — here, a creamy ricotta and spinach filling brightened with nutmeg and Parmesan. Homemade, they’re a world apart from the boxed kind.

A versatile classic, ravioli can be filled with anything from pumpkin to meat ragù and served with butter, sage, or tomato sauce. Making them by hand is a lovely weekend project that rewards patience.

Step by stepInstructions

  1. Make the pasta: mound the flour with a well in the center, add the eggs, salt, and oil, and mix into a dough. Knead 8 minutes, wrap, and rest 30 minutes.
  2. Mix the filling: ricotta, spinach, Parmesan, egg yolk, nutmeg, salt, and pepper.
  3. Roll the dough into thin sheets with a pasta machine.
  4. Place teaspoonfuls of filling 2 inches apart on one sheet; brush water between them and lay a second sheet on top.
  5. Press around each mound and cut into squares with a fluted cutter.
  6. Cook the ravioli in boiling salted water until they float, about 3-4 minutes.
  7. Meanwhile, brown the butter with the sage; toss the drained ravioli in it and serve with extra Parmesan.

💡 Chef tips & storage

Keep the filling dry — squeeze every drop of moisture from the spinach so the ravioli don't leak. Freeze extras in a single layer before bagging.
