A golden, juicy bird with crisp skin and a fragrant sage-and-onion stuffing — the meal everything else revolves around.

Step by stepInstructions

  1. Preheat the oven to 325°F. Make the stuffing: melt the butter, cook the onion and celery until soft, toss with the bread, herbs, and broth; season. Cool completely.
  2. Remove the turkey giblets, pat the bird dry, and season inside and out with salt, pepper, thyme, and paprika.
  3. Rub the turkey with the softened butter, stuff the cavity with the lemon, onion, and celery.
  4. Place the turkey breast-side up in a roasting pan, add the broth to the pan, and cover loosely with foil.
  5. Roast 3 to 3 1/2 hours, basting every 45 minutes and removing the foil for the last 45 minutes, until the thigh reaches 165°F. Rest 30 minutes before carving. Bake the stuffing separately at 375°F for 30-35 minutes.

💡 Chef tips & storage

Check the temperature in the thickest part of the thigh — 165°F is done. Resting the bird before carving keeps the meat juicy.
