  2. Beat the egg yolks with the sugar until pale and thick. Stir in the carrots, hazelnuts, flour, baking powder, lemon zest, and lemon juice.
  3. In a separate bowl, whip the egg whites with the salt until stiff peaks form. Fold them into the carrot mixture in three additions.
  4. Scrape into the pan and bake 40–45 minutes until a skewer comes out clean and the top is deep golden.
  5. Cool in the pan 10 minutes, then unmold and cool completely. Dust with powdered sugar and serve with whipped cream.
