Sabzi Polo ba Mahi

Sabzi polo ba mahi — herb rice with fish — is the traditional meal of Nowruz, the Persian New Year, when families gather to celebrate spring. The rice is layered with a generous amount of fresh herbs, dill, parsley, chives, and cilantro, and served alongside fish that has been fried or grilled simply, often with a saffron and lime finish. The green-flecked rice is as beautiful as it is fragrant. The herbs are the star — Iranians measure them in armfuls, not cups — and the rice should be dotted green through and through.

Each grain of rice carries the fresh, grassy perfume of the herbs, while the fish is crisp-skinned and delicate. The pairing is light and springlike, exactly right for a holiday that celebrates renewal. Leftover rice makes a wonderful breakfast fried with a little butter and a soft egg. If you cannot find whole fish, fillets with the skin on work beautifully and turn extra crisp in the pan.

  1. Soak the rice in salted water for 30 minutes. Dissolve the saffron in 3 tablespoons of hot water.
  2. Parboil the rice in boiling salted water for 6 minutes and drain.
  3. Toss the rice with the chopped herbs and half the salt.
  4. Melt the butter in a heavy pot, mound in the herbed rice, drizzle with 3 tablespoons of water, and steam covered over low heat with a towel-wrapped lid for 35 to 40 minutes.
  5. Meanwhile, season the fish with salt and pepper, dust lightly with flour, and pan-fry in the oil over medium-high heat, 3 to 4 minutes per side, until golden and cooked through.
  6. Drizzle the fish with a little saffron water and a squeeze of lime.
  7. Mound the rice on a platter and arrange the fish alongside, with lime wedges.

💡 Chef tips & storage

Chop the herbs fine but do not overdo it — they should fleck the rice, not dominate it. Any firm white fish works; trout and sea bass are traditional.
