Fijian Chicken Curry

Fiji’s Indian community shaped the nation’s palate, and nowhere more so than with curry. Indo-Fijian chicken curry, built on cumin, coriander and turmeric with a rich coconut finish, is served in homes across the islands with roti or rice.

Slow simmering makes the chicken spoon-tender and the gravy deeply savoury, with a gentle warmth rather than fierce heat. Serve with flaky roti to mop up every drop.

One of the great curry traditions — mapped in our World of Curries guide.

Step by stepInstructions

  1. Heat the oil in a large pot over medium heat and brown the chicken on all sides; set aside.
  2. In the same pot, cook the onion until soft and golden, about 8 minutes. Add the garlic and ginger and cook 1 minute more.
  3. Stir in the curry powder and turmeric, then add the tomatoes and cook until softened.
  4. Return the chicken with the potatoes, salt and 2 cups of water. Bring to a simmer, cover and cook for 30 minutes.
  5. Stir in the coconut milk and simmer uncovered for 15 minutes, until the chicken is tender and the gravy thickens.
  6. Scatter with coriander and serve hot with roti or steamed rice.

💡 Chef tips & storage

Toast the curry powder in the oil for a minute before adding liquid — it deepens the flavour enormously. For more heat, add a finely chopped chilli with the garlic and ginger.
