Burgers made from salmon are a West Coast original — a riff on the backyard hamburger that swaps in the fish that defines the region. They started appearing on BC menus and dockside grills as home cooks looked for new ways to celebrate the summer salmon run, and they’ve become a staple of coastal summer entertaining.

What makes them great is the fresh, clean flavour of the fish itself: coarsely chopped salmon bound with just a little breadcrumb and egg, seasoned with lemon zest, dill, and a touch of Dijon. Grilled until charred at the edges and tender in the middle, they’re a lighter, brighter take on a classic, perfect on a toasted bun with a spoonful of tartar sauce or a slice of ripe tomato.

Step by stepInstructions

  1. Chop half the salmon finely and the other half into small chunks, then combine both in a large bowl.
  2. Add the panko, egg, mayonnaise, mustard, lemon zest, green onion, dill, salt, and pepper and mix gently until just combined.
  3. Shape the mixture into 4 patties and refrigerate them on a parchment-lined plate for 30 minutes to firm up.
  4. Brush the patties lightly with oil and grill or pan-sear over medium-high heat for 4 to 5 minutes per side, until golden and cooked through.
  5. Toast the buns and spread a little tartar sauce on each one.
  6. Assemble the burgers with lettuce, tomato, and the salmon patties, and serve immediately.

Chilling the patties before cooking is essential — it stops them from falling apart on the grill. Leave a few chunks of salmon in the mix for a juicier, more interesting texture than a fully ground burger.
