Poi is one of the oldest prepared foods in the Pacific, and in Samoa it is made by boiling taro until tender, then mashing it with water into a smooth, sticky paste. Left to rest for a day or two, it develops a gentle tang that Samoans love. It is served as a side to rich dishes like palusami and povi popo, where its mild flavor and creamy texture balance the coconut-heavy feast.

What makes it great: freshly made poi is sweet and mild, like the smoothest mashed potato, while fermented poi gains a subtle sourness that is surprisingly addictive. It is naturally filling, completely dairy-free, and the perfect cool, soothing partner to bold island flavors.

Step by stepInstructions

  1. Boil the taro in salted water for 25-30 minutes until very soft, then drain well.
  2. Mash the taro with the water until smooth, adding more water a little at a time until it reaches a thick, pudding-like consistency.
  3. Stir in the salt and, if using, the coconut cream or mashed banana.
  4. For fresh poi, serve immediately at room temperature.
  5. For fermented poi, cover the bowl and leave at room temperature for 1-3 days, stirring daily, until it develops a mild tang.
  6. Stir in a little water before serving if the poi has thickened.
