Samp and beans, known as umngqusho in isiXhosa, is a true South African staple: cracked dried corn and sugar beans simmered together for hours until soft and creamy. It was the favorite dish of Nelson Mandela, who asked for it at the prison on Robben Island, and it has fed families across the country for generations. Humble ingredients, patient cooking, and a deep, nutty comfort are the whole recipe.

The corn and beans melt into each other as they cook, the beans giving up their creaminess to make a thick, porridge-like pot with a gentle sweet-corn flavor. Onion, butter, and a whisper of curry lift it without stealing the honest taste of the grains. Eat it as a side with braised meat, or on its own with a knob of butter and a sprinkle of salt.

Step by stepInstructions

  1. Rinse the samp and beans, then soak them overnight in cold water. Drain and rinse again.
  2. Heat the oil in a large pot and cook the onion until soft and translucent, about 5 minutes.
  3. Add the samp, beans, curry powder, and 6 cups of water. Bring to a boil, then reduce to a gentle simmer.
  4. Cover and cook for 2 hours, stirring every 20 minutes or so, until the beans are tender.
  5. Add the tomato, salt, and black pepper, and continue simmering for 30 minutes more, stirring often so the bottom does not catch.
  6. When the mixture is thick and creamy, stir in the butter until it melts and glosses the grains.
  7. Taste for salt and serve hot with braised meat or on its own.

💡 Chef tips & storage

Soak the beans overnight to cut the cooking time by about an hour. Stir occasionally and add hot water if it looks dry — the pot should stay creamy, not soupy.
