Sernik

Sernik is Poland’s beloved baked cheesecake — a dense, creamy, golden-topped cake made from twaróg, the Polish farmer’s cheese, with a delicate vanilla and lemon perfume. Unlike American cheesecake, which leans on cream cheese, sernik has a distinctive, slightly tangy, rustic character, and it is the dessert of Polish holidays, name days, and Sunday coffee tables. It is served plain, with a dusting of sugar, or crowned with a layer of fruit.

Why this recipe works: The heart of sernik is twaróg — a pressed, crumbly farmer’s cheese — passed through a sieve or milled until silky, then blended with butter, sugar, eggs, and a little cream. Baked low and slow, it sets into a dense, creamy cake with a lightly golden top. The subtle flavors — vanilla, lemon zest, a hint of rum or raisins — let the cheese speak.

Key ingredients

  • Twaróg (farmer’s cheese): the essential base — if unavailable, well-drained ricotta is the closest substitute.
  • Butter and sugar: the richness and sweetness.
  • Eggs: separated — the whites beaten and folded in for lightness.
  • Vanilla and lemon zest: the perfume.
  • A buttery crust or none at all: the traditional version is often crustless.

Tips for the perfect sernik

Press the twaróg through a fine sieve or pulse it in a food processor until completely smooth — lumps are the enemy. Beat the yolks with the sugar and butter until creamy, fold in the cheese and flavorings, then fold in the beaten whites gently. Bake at 325°F in a buttered springform pan until the edges are set and the center still wobbles, 55 to 65 minutes; the top should be pale golden. Cool slowly in the turned-off oven with the door cracked, then chill thoroughly before slicing.

Variations and storage

Top it with a layer of sour cream, fresh berries, or a chocolate glaze, or add raisins soaked in rum to the batter. Sernik keeps 5 days in the fridge and freezes well for 2 months — it is a cheesecake that only improves with a day of rest.

Step by stepInstructions

  1. Preheat the oven to 325°F. Butter a 9-inch springform pan and press the crumb-butter mixture into the bottom.
  2. Beat the farmer cheese until completely smooth, then beat in the butter and sugar.
  3. Add the eggs one at a time, beating well after each. Stir in the sour cream, starch, vanilla, lemon zest, and lemon juice.
  4. Pour the filling over the crust and smooth the top.
  5. Bake for 65-70 minutes until set around the edges with a slight jiggle in the center.
  6. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour, then chill overnight before slicing.

💡 Chef tips & storage

Push the cheese through a sieve for a truly silky texture — it makes all the difference. The slow cool in the oven prevents cracking.
