Shish Tawook - char-grilled chicken skewers with toum

Shish tawook is the Levant’s answer to barbecue: cubes of chicken marinated for hours in a garlicky yogurt blend, threaded onto skewers, and grilled until charred at the edges and juicy in the middle. It is a restaurant classic across Syria, and it is just as easy to make on a home grill or under the broiler. The long marinade does the heavy lifting, so the cooking itself is quick. Serve it with toum — the addictive garlic sauce — and let everyone swipe their skewers through it.

Charred, garlicky, and impossible to resist

The yogurt marinade does double duty, tenderizing the chicken and carrying the warm notes of paprika, allspice, and a whisper of cinnamon. High heat gives the outside a smoky char while the inside stays moist and juicy. Pull the skewers off the moment they are done, let them rest briefly, and serve with warm flatbread, grilled tomatoes, and a generous bowl of garlic sauce.

Step by stepInstructions

  1. Whisk the yogurt, lemon juice, tomato paste, garlic, paprika, allspice, cinnamon, salt, pepper, and olive oil in a bowl.
  2. Add the chicken cubes and coat thoroughly. Cover and marinate in the refrigerator for at least 2 hours, or overnight.
  3. Thread the chicken onto skewers, packing the cubes snugly.
  4. Heat a grill or broiler to high. Cook the skewers for 10 to 12 minutes, turning every few minutes, until charred at the edges and cooked through.
  5. Rest the skewers for 5 minutes.
  6. Serve over rice or wrapped in flatbread with garlic sauce and grilled tomatoes.

💡 Chef tips & storage

Do not skip the long marinade — the yogurt is what makes the chicken so juicy. Soak wooden skewers in water for 30 minutes before threading, and pull the skewers off the grill the moment the chicken is cooked through.
