Chicken thighs simmered in a sweet shoyu sauce with ginger and garlic.

Local plate lunch royalty

Chicken thighs simmered in soy, sugar, ginger, and garlic until glossy and falling apart — the plate lunch staple.

Step by stepInstructions

  1. Whisk the soy sauce, brown sugar, water, garlic, and ginger in a pot.
  2. Add the chicken thighs, bring to a simmer, and cook 30-35 minutes, turning occasionally, until tender and the sauce is glossy.
  3. Remove the chicken; boil the sauce 5 minutes to reduce.
  4. Slice the chicken, spoon the sauce over, and finish with green onions and sesame oil. Serve with rice.

💡 Chef tips & storage

Bone-in thighs are even better — just cook 10 minutes longer. The reduced sauce is gold; spoon it generously.
