Chef Emily presents King Ranch Chicken Casserole

The Texas casserole legend

Shredded chicken, corn tortillas, and a creamy chile sauce baked under melted cheese — King Ranch chicken casserole.

Step by stepInstructions

  1. Heat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Whisk the soups, Rotel, sour cream, chili powder, and cumin into a sauce.
  3. Layer half the tortillas in the dish, then half the chicken, half the sauce, and half the cheeses. Repeat the layers, ending with cheese.
  4. Bake 35-40 minutes until hot and bubbling.
  5. Rest 10 minutes before serving.

💡 Chef tips & storage

Use slightly stale tortillas — they hold up better in the casserole. Rotel tomatoes give the sauce its signature kick; use mild or original to control the heat.
