The shrimp po’boy is the great fried sandwich of New Orleans — crispy fried shrimp piled on a crusty French roll with shredded lettuce, tomato, and a tangy rémoulade. ‘Po’boy’ means ‘poor boy,’ but this sandwich has made plenty of people feel rich.

  1. Whisk the cornmeal, flour, Cajun seasoning, garlic powder, cayenne, and salt. Whisk the buttermilk and egg in a separate bowl.
  2. Dip the shrimp in the wet mixture, then dredge in the cornmeal mixture.
  3. Heat 1 1/2 inches of oil to 360°F (180°C). Fry the shrimp in batches 2-3 minutes until golden and crisp. Drain on a rack.
  4. Split the rolls and toast the cut sides. Spread with rémoulade, then pile with lettuce, tomato, and the fried shrimp.
  5. Close and serve immediately.

💡 Chef tips & storage

Use a crusty French loaf, not a soft bun — the bread needs to hold up to the rémoulade. Fry the shrimp in small batches so they stay crisp.
