Smothered Pork Chops

Smothered pork chops are the Deep South’s weeknight comfort dinner — thick pork chops seared golden, then braised low and slow in a rich onion gravy until they’re tender enough to fall apart. Serve them over rice or mashed potatoes.

Seared pork chops braised in a rich, savory onion gravy until meltingly tender — the Southern comfort classic.

  1. Season the chops and dredge in flour. Heat the oil in a large skillet and brown the chops 3 minutes per side. Remove and set aside.
  2. In the same skillet, cook the onions slowly until golden and soft, about 10 minutes. Add the garlic and cook 1 minute.
  3. Sprinkle in 2 tbsp of the remaining flour and cook 1 minute, then pour in the stock, scraping up the browned bits. Add the thyme and paprika.
  4. Return the chops to the skillet, cover, and simmer 30-35 minutes until tender.
  5. Serve the chops with the gravy, garnished with parsley.

💡 Chef tips & storage

Brown the chops well — that crust flavors the whole gravy. Cook the onions long and low until they're jammy and sweet.
