Sopa de guineo is the everyday soup of Colombia’s Pacific and Caribbean lowlands, where green bananas — guineos — simmer with aromatics into a gentle, starchy broth. It is the kind of honest food that cooks itself from whatever is in the garden.

Green bananas, humble and soothing

The bananas soften into tender, potato-like chunks while the broth turns lightly starchy and fragrant with cilantro and scallion. A splash of milk makes it silkier, and it is best eaten steaming hot, mopped up with rice.

Step by stepInstructions

  1. Peel the green bananas: score each one lengthwise and pull the skin off in strips (it helps to wet your hands first).
  2. Cut the bananas into thick rounds.
  3. Heat the oil in a pot and cook the onion, scallions, and garlic for 4 minutes.
  4. Add the banana rounds, the water or broth, and the cilantro bundle; simmer for 25 minutes, until the bananas are tender but still hold their shape.
  5. Stir in the milk (if using) and salt, and simmer 5 minutes more.
  6. Remove the cilantro, ladle into bowls, and serve hot with rice or fried fish.

💡 Chef tips & storage

Use fully green bananas so the chunks keep their shape; ripe ones turn mushy and sweet. The soup does not keep well — make only what you will eat in a day.
