Soul food fried chicken

Buttermilk-marinated chicken seasoned generously and fried to a deep golden crackle, a true soul food centerpiece.

The Sunday centerpiece

Buttermilk-soaked, boldly seasoned chicken fried to a shattering golden crust — the recipe that built the soul food tradition.

Step by stepInstructions

  1. Season the chicken with 1 teaspoon of the salt and 1 teaspoon of the pepper; mix with the buttermilk and hot sauce and marinate 4 hours or overnight.
  2. Mix the flour, paprika, garlic powder, onion powder, cayenne, the remaining salt, and remaining pepper in a shallow dish.
  3. Drain the chicken and dredge in the seasoned flour, pressing well.
  4. Heat 1 inch of oil to 350°F in a deep heavy skillet.
  5. Fry the chicken in batches, 12-15 minutes, turning occasionally, until deep golden and cooked through (165°F). Drain on a rack and serve.

💡 Chef tips & storage

An overnight buttermilk soak makes the juiciest chicken. Keep the oil at a steady 325-350°F and don't crowd the pan.
