  1. Heat 2 tablespoons of the oil in a wok over high heat. Fry the garlic and chilies for 30 seconds, until fragrant but not burned.
  2. Add the ground pork and stir-fry, breaking it up, until it is cooked through and starting to crisp at the edges, about 4 minutes.
  3. Stir in the oyster sauce, fish sauce, soy sauce, and sugar and toss for 1 minute.
  4. Add the holy basil and toss just until it wilts, about 30 seconds. Remove from the heat.
  5. Heat the remaining oil in a small skillet and fry the eggs sunny-side up until the edges are lacy and crisp.
  6. Serve the pork over steamed jasmine rice with a fried egg on top.

💡 Chef tips & storage

Use holy basil if you can find it — regular Thai or Italian basil is a fine stand-in, but the flavor will be softer. Add the basil at the very end so it wilts without turning dark.
