Whiting fillets dredged in seasoned cornmeal and fried crisp and golden.

Delicate whiting fillets in a seasoned cornmeal crust, fried until crisp — a lighter fish fry favorite that’s gone in minutes.

Step by stepInstructions

  1. Soak the whiting in the buttermilk with the salt for 30 minutes.
  2. Mix the cornmeal, flour, Cajun seasoning, garlic powder, pepper, and cayenne.
  3. Drain the fillets and dredge in the cornmeal mixture.
  4. Heat 1/2 inch of oil to 350°F.
  5. Fry the fillets 3 minutes per side until golden and crisp. Drain and serve with lemon and hot sauce.
