Southern fried squash slices in seasoned cornmeal crust

Southern fried squash is the summer side that turns a garden vegetable into gold — yellow squash sliced, dipped in seasoned cornmeal, and fried until crisp and tender. It’s the quick, seasonal side of Southern kitchens.

Chef Emily presents Southern Fried Squash

The golden summer side

Yellow squash coated in seasoned cornmeal and fried until crisp — the Southern summer side dish.

Step by stepInstructions

  1. Whisk the cornmeal, flour, garlic powder, cayenne, salt, and pepper.
  2. Dip the squash slices in the buttermilk, then dredge in the cornmeal mixture.
  3. Heat 1/2 inch of oil in a large skillet to 365°F (185°C).
  4. Fry the squash in batches 2-3 minutes per side until golden and crisp.
  5. Drain on paper towels and serve hot.

💡 Chef tips & storage

Slice the squash evenly so it cooks through. Salt the slices lightly before coating and pat dry — it keeps the crust crisp.
