All the magic of elote — charred corn, crema, cotija, chili, lime — in an easy scoopable salad.

Step by stepInstructions

  1. Char the corn in a hot skillet or on the grill until spotty and golden, about 8 minutes; cool slightly.
  2. Whisk the mayonnaise, sour cream, lime juice, chili powder, paprika, and salt.
  3. Toss the warm corn with the dressing.
  4. Fold in the cotija and cilantro. Dust with extra chili powder and serve with lime wedges.

💡 Chef tips & storage

Serve it warm or at room temperature — that's when the flavors pop. Crumbled bacon makes a great addition.
