Step by stepInstructions

  1. Heat the oil in a large pot and cook the onion until soft, about 5 minutes; add the garlic, poblano, cumin, oregano, and coriander and cook 1 minute.
  2. Add the squash and cook 5 minutes, stirring.
  3. Add the corn, beans, tomatoes, broth, salt, and pepper. Simmer 30 minutes until the squash is tender.
  4. Taste and adjust seasoning; stir in the cilantro.
  5. Serve hot with lime wedges and warm tortillas.
