Squid simmered with taro leaves and coconut milk, a traditional feast dish.

The luau’s deep green pot

Tender squid and taro leaves simmered in rich coconut milk — earthy, briny, and deeply traditional.

Step by stepInstructions

  1. Blanch the taro leaves in boiling water 10 minutes; drain well.
  2. Simmer the squid in the broth with the onion and garlic 30 minutes until tender.
  3. Add the taro leaves and coconut milk; simmer 30 minutes more, stirring occasionally.
  4. Season with salt and pepper and swirl in the butter.
  5. Serve hot with rice or poi.

💡 Chef tips & storage

Taro leaves must be fully cooked — they're toxic raw. Fresh squid is far more tender than frozen.
