Stuffed vegetables, or m’hasha, are the Sephardic-Israeli dinner of zucchini and peppers packed with herbed beef and rice, simmered in lemony tomato sauce. The dish traveled to Israel with Jewish families from the Ottoman lands, where stuffing vegetables was the grand way to feed a crowd. Every family has a favorite vegetable — cabbage, vine leaves, or peppers — and the pot always disappears.

The zucchini turn silky and sweet as they simmer, absorbing the bright, lemony tomato sauce, while the beef-and-rice filling swells into something moist and fragrant with herbs. The sauce reduces into a rich, spoonable gravy that begs for challah or rice alongside. Each stuffed vegetable is a little package of comfort, and the pot is as much the star as the filling. Serve them standing up in the sauce, and let everyone fight over the last zucchini. Leftovers taste even better the next day, when the sauce has soaked into every corner of the vegetables.

Step by stepInstructions

  1. Cut the zucchini into 3-inch lengths and hollow out the centers with a corer or small spoon, leaving a thin wall.
  2. Slice the tops off the peppers and remove the seeds and membranes.
  3. Mix the beef, rice, onion, half the garlic, parsley, dill, allspice, 1 teaspoon salt, and 1/2 teaspoon pepper in a bowl.
  4. Stuff the vegetables loosely, leaving room for the rice to expand.
  5. Heat the oil in a wide, heavy pot over medium heat. Cook the remaining garlic 1 minute.
  6. Add the crushed tomatoes, remaining salt and pepper, lemon juice, and 1 cup water. Bring to a simmer.
  7. Stand the stuffed vegetables upright in the sauce. Cover and simmer gently until the rice is cooked and the vegetables are tender, 50 to 60 minutes.
  8. Let rest 10 minutes and serve with the sauce spooned over the top.

Do not pack the filling tight — the rice needs room to swell. Simmer gently, never boil, so the zucchini stays intact.
