- Boil the ñame in salted water until very tender, about 25 minutes; drain well.
- Mash the ñame with the butter, milk, egg yolks, cheese, nutmeg, salt and pepper until smooth and creamy.
- Beat the egg whites to stiff peaks and fold them gently into the yam mixture in three additions.
- Butter a soufflé dish and dust with breadcrumbs; spoon in the mixture and smooth the top.
- Bake at 375°F (190°C) for 35 to 40 minutes, until puffed and golden; serve immediately.
💡 Chef tips & storage
Fold the whites in gently and do not open the oven while baking or the soufflé will deflate. Serve straight from the oven, since it inevitably falls — that is part of its charm.
