Sütlaç (Turkish Rice Pudding)

Sütlaç, the rice pudding of Turkey, is the dessert that tastes like childhood to almost everyone who grew up there. Short-grain rice simmers slowly in milk until the grains soften and the milk turns thick and creamy, sweetened lightly with sugar and finished with a hint of vanilla. The baked version, fırın sütlaç, is the favorite, with its signature caramel-flecked surface. Served cool from clay bowls with a dusting of cinnamon, it ends meals quietly and perfectly.

Creamy rice, cinnamon-kissed

The pudding is dense and silky, with soft rice grains suspended in sweet, milky cream and a caramel-touched skin on top from the oven. It is gentle and soothing, never cloying, the kind of dessert that finishes a meal without a fuss. Stir often while cooking so the milk does not scorch, and let the bowls cool completely before they hit the fridge. It keeps for three days chilled, though the skin is best enjoyed on the first day.

Step by stepInstructions

  1. Rinse the rice well. Combine it with 1 1/2 cups water in a pot, bring to a boil, and simmer until the rice is very soft and the water is absorbed, about 15 minutes.
  2. Add the milk and sugar and bring to a gentle simmer, stirring often, about 10 minutes.
  3. Whisk the cornstarch with the 1/4 cup water until smooth and stir it into the pudding.
  4. Cook, stirring constantly, until the pudding thickens to a loose custard, about 10 minutes. Stir in the vanilla.
  5. Preheat the oven to 350°F. Ladle the pudding into 6 small ovenproof bowls.
  6. Bake until the tops turn patchy golden brown, 25 to 30 minutes.
  7. Cool, then chill until set. Dust with cinnamon before serving.

💡 Chef tips & storage

Stir the pudding often so the milk does not scorch on the bottom. The golden skin on top is the best part — do not skip the bake.
