  1. Toss the pork with the salt. Whisk the cornstarch and flour in a bowl, then dip the pork pieces in the beaten egg and coat well in the flour mixture.
  2. Heat the oil in a wok or deep skillet to 350°F. Fry the pork in batches for 4 to 5 minutes, until golden, then drain on paper towels.
  3. Raise the heat to 375°F and fry the pork again for 90 seconds to make the crust extra crisp. Drain and set aside.
  4. Pour off all but 1 tablespoon of oil and stir-fry the onion and peppers for 2 minutes, until bright but still crunchy.
  5. Add the ketchup, vinegar, sugar, and 1/4 cup water and simmer for 1 minute. Stir in the pineapple.
  6. Thicken with the cornstarch slurry and boil for 30 seconds, until glossy.
  7. Toss in the pork and turn to coat. Serve immediately over steamed rice.
