Tex-Mex rice — or Spanish rice — is the tomato-sauced, garlicky side that belongs on every Tex-Mex plate. Long-grain rice toasted in oil, simmered with tomato, onion, and spices until fluffy and deeply seasoned. It’s the bed for everything from enchiladas to fajitas.

Step by stepInstructions

  1. Heat the oil in a saucepan and toast the rice, stirring, until golden, about 3 minutes.
  2. Add the onion and cook 3 minutes, then the garlic for 1 minute.
  3. Stir in the tomato sauce, stock, cumin, chili powder, and salt.
  4. Bring to a boil, cover, and simmer 18 minutes until the liquid is absorbed.
  5. Fluff with a fork and stir in the peas and carrots, if using.

💡 Chef tips & storage

Toast the rice in oil until golden before adding liquid — it keeps the grains separate. Use chicken stock instead of water for more flavor.
