Tongan Coconut Rice (Raisi Lolo)

Raisi lolo, or coconut rice, is the Pacific answer to plain steamed rice. Cooked entirely in coconut milk with a pinch of salt, it turns rich, creamy, and faintly sweet, and it shows up beside curries, lu dishes, and grilled fish all over Tonga. It is also a favorite lunch on its own with a fried egg or leftover meat on top.

What makes it great: each grain is plump and glossy, carrying a gentle coconut sweetness that makes everything it touches taste better. It is nearly effortless to make, uses pantry staples, and transforms a simple meal into something special.

Step by stepInstructions

  1. Rinse the rice in cold water until the water runs clear, then drain well.
  2. Combine the rice, coconut milk, water, and salt in a pot; add the pandan leaf or vanilla if using.
  3. Bring to a boil over medium-high heat, then reduce to the lowest setting, cover, and cook for 15-18 minutes, until the liquid is absorbed.
  4. Turn off the heat and let the rice rest, covered, for 10 minutes.
  5. Fluff with a fork, taste, and add the sugar if you like it slightly sweet; serve warm.

💡 Chef tips & storage

Letting the rice rest after cooking is essential — it finishes steaming and turns fluffy instead of gluey. Coconut milk scorches easily, so keep the heat low once it boils.
