Ota ika is Tonga’s beloved raw fish dish, served at almost every Tongan celebration. Like its Fijian and Samoan cousins, it ‘cooks’ fresh fish in citrus juice before folding it through thick coconut cream — simple, fresh and unapologetically Pacific.
