Step by stepInstructions

  1. Whisk the flour, baking powder, salt, and paprika; whisk in the cold beer and egg until smooth.
  2. Heat 2 inches of oil to 375°F.
  3. Dip the curds in the batter, letting the excess drip off.
  4. Fry in small batches 1-2 minutes until golden and puffed, turning once.
  5. Drain, season with a pinch of salt, and serve immediately with ranch or marinara.

💡 Chef tips & storage

Keep the curds very cold and the oil hot — the batter should brown before the cheese fully melts. Eat them immediately for the squeak.
