Yakisoba (stir-fried noodles) with pork, cabbage and pickled ginger

Yakisoba was born in the years after World War II, when cooks took Western-style fried noodles and gave them a distinctly Japanese sauce of Worcestershire, soy, and a touch of sweetness. Today it is the smell of summer festivals, sizzling on enormous griddles and served in paper boats, but it is just as common on weekday tables at home. The noodles are chewy, the vegetables crisp, and the whole thing comes together in one hot pan in minutes.

Every strand is coated in the glossy, sweet-savory sauce, tangled with cabbage, carrot, and slices of pork, and finished with a storm of pickled ginger and crumbled nori. High heat gives the noodles a light char that makes them taste like they came straight off a street cart. A drizzle of Japanese mayonnaise on top is optional but very much in the spirit of things, and a cold beer alongside makes it a festival at home.

Step by stepInstructions

  1. Loosen the yakisoba noodles in warm water, then drain them well.
  2. Heat 1 tbsp of the oil in a wok or large skillet over high heat. Add the pork and stir-fry until browned, about 2 minutes.
  3. Add the onion, carrot, and cabbage and stir-fry for 2 minutes, until just starting to soften.
  4. Push everything to one side of the pan, add the remaining oil and the noodles, and cook for 1 to 2 minutes without stirring so the noodles get a little char.
  5. Toss the noodles with the vegetables, then add the yakisoba sauce and soy sauce and toss until every strand is coated, about 1 minute.
  6. Add the scallions, toss once, and serve topped with pickled ginger, crumbled nori, and a squiggle of mayonnaise if you like.

💡 Chef tips & storage

Cook the noodles over high heat and leave them alone for a minute so they pick up a light char. Fresh yakisoba noodles need only a quick rinse in warm water, not a boil.
