Maki Sushi Rolls with cucumber, avocado and tuna

Makizushi, the rolled sushi of thin nori sheets wrapped around seasoned rice, began as a fast-food snack at Edo’s sushi stalls in the early 1800s. Vendors rolled leftover fish and vegetables into rice so laborers could eat with their fingers, and the shape has barely changed since. At home, rolling your own is easier than it looks and turns a weeknight into something special.

Sticky rice, bright fillings, one neat bite

Properly seasoned rice is cool, glossy, and just firm enough to hold its shape, while crisp cucumber, silky avocado, and clean, fresh tuna keep every slice bright. A dab of wasabi and a dip in soy sauce wake the flavors right up. Once you master the roll, the filling combinations are endless, and the tidy, generous slices are deeply satisfying whether you make them for a party or just for yourself.

Step by stepInstructions

  1. Rinse the rice in a fine-mesh strainer until the water runs clear, then cook it with 2 1/2 cups water in a rice cooker or pot.
  2. Warm the rice vinegar with the sugar and salt until dissolved, then fold it into the hot rice. Fan the rice until it cools to room temperature.
  3. Prep the fillings: cut the cucumber, avocado, and tuna into long, thin strips.
  4. Lay a sheet of nori, shiny side down, on a bamboo mat. Spread about 3/4 cup of rice evenly over it, leaving a 1-inch strip bare at the far edge.
  5. Arrange strips of cucumber, avocado, and tuna in a line across the rice near the edge closest to you.
  6. Lift the mat and roll the nori away from you, tucking the filling in as you go. Press gently to make a firm, even cylinder.
  7. Repeat with the remaining nori and filling. Wipe the knife with a damp cloth between cuts and slice each roll into 6 pieces.
  8. Serve with soy sauce, wasabi, and pickled ginger.

💡 Chef tips & storage

Use short-grain sushi rice and season it while it is still warm so the vinegar soaks in evenly. A sharp, wet knife gives clean cuts without crushing the roll.
