Step by stepInstructions

  1. If using canned jackfruit, rinse it well and squeeze out the brine; cut into 2-inch chunks. If using fresh, trim away the skin and cut the flesh into chunks.
  2. Heat the coconut oil in a pot over medium heat. Add the onion, garlic, ginger, curry leaves, and pandan and cook for 5 minutes, until soft.
  3. Add the curry powder, chili powder, turmeric, and salt and stir for 1 minute.
  4. Add the jackfruit and toss to coat in the spices. Cook for 3 minutes.
  5. Pour in the coconut milk and water and bring to a gentle simmer. Cover and cook over low heat for 30 minutes, stirring occasionally.
  6. Uncover and simmer for 10 to 15 minutes, until the jackfruit is tender and the gravy has thickened.
  7. Stir in the lime juice, rest 5 minutes, and serve with rice.
