- Boil the yuca sticks in salted water until just tender, about 15 minutes; do not overcook or they will fall apart.
- Drain well and pat thoroughly dry with a kitchen towel.
- Heat the oil in a deep skillet to 350°F (175°C).
- Fry the yuca in batches until golden brown and crisp on the edges, about 5 minutes per batch.
- Drain on paper towels and sprinkle with coarse salt.
- Stir the mashed garlic, olive oil, vinegar and a pinch of salt together and serve alongside for dipping.
💡 Chef tips & storage
The yuca must be fully dry before frying or it will spatter and turn soggy. The garlic mojo is the classic Panamanian companion, but they are just as good with chicharrón.
