Minestrone has ancient roots in Italian peasant cooking, originally a simple vegetable soup made from whatever was available in the garden, with pasta or rice added as a filling starch. It became a beloved Italian-American staple throughout the 20th century, prized for its hearty, wholesome combination of vegetables and beans.

Hearty, wholesome, and packed with vegetables

A medley of vegetables, beans, and small pasta simmer together in a savory tomato broth for a hearty, wholesome Italian classic.

Step by stepInstructions

  1. Heat olive oil in a large pot and sauté the onion, carrots, and celery until softened.
  2. Add the garlic and cook 1 minute.
  3. Stir in the tomatoes, vegetable broth, and Italian seasoning, and bring to a simmer.
  4. Add the kidney beans and pasta, and cook 10-12 minutes until the pasta is tender.
  5. Stir in the kale during the last 3-5 minutes until wilted.
  6. Season to taste and serve with grated parmesan.

💡 Chef tips & storage

Add the pasta later in cooking if you plan to have leftovers, as it continues to absorb liquid and can turn mushy if left in the soup too long. Any leafy green or seasonal vegetable works well in this flexible recipe.
