Miso Soup with tofu, wakame and shiitake

Miso soup has opened Japanese meals for over a thousand years, ever since fermented soybean paste arrived from China and monks in Kamakura started simmering it into a daily ritual. It is the taste of home, of breakfast tables and family dinners, and no two households make it exactly the same way. It is often the first thing children learn to cook, and a good bowl is gentle, savory, and quietly restorative.

Comfort in a cloudy bowl

Silky miso dissolves into clear dashi to make a broth that is salty, earthy, and faintly sweet, with soft cubes of tofu, rehydrated wakame, and mushrooms bobbing inside. Every spoonful warms from the inside out without ever feeling heavy. Ladle it hot, finish with scallions, and serve it alongside rice for a meal that feels complete. It also comes together in twenty minutes, which is why it earns its place at the table night after night.

Step by stepInstructions

  1. Soak the wakame in a small bowl of water for 5 minutes, then drain.
  2. In a pot, bring the dashi to a gentle simmer over medium heat.
  3. Add the shiitake and carrot and simmer for 3 to 4 minutes, until just tender.
  4. Turn the heat to low. Put the miso in a ladle or small strainer and stir it into the broth until fully dissolved.
  5. Add the tofu and wakame and heat for 1 minute. Do not let the soup boil.
  6. Ladle into bowls, top with scallions and sesame seeds, and serve hot.

💡 Chef tips & storage

Never boil miso soup after adding the miso, or the flavor turns flat. You can vary the vegetables with the season, but keep the dashi and miso ratio steady.
