Ingredients (6 servings)

  • 1 lb (450g) cooked chicken, shredded or cubed
  • 1 sheet puff pastry (or 1 pie crust)

Instructions

  1. Heat the oven to 400°F (200°C).
  2. Melt the butter in a large oven-safe skillet. Cook the onion, carrots, and celery until softened, 6–7 minutes.
  3. Stir in the flour and cook 1 minute. Whisk in the broth and milk and simmer until thickened, 4–5 minutes.
  4. Stir in the chicken, peas, thyme, salt, and pepper. Cook 2 minutes more.
  5. Drape the pastry over the filling, tuck in the edges, and cut a few slits for steam.
  6. Brush with the beaten egg and bake 25–30 minutes, until the crust is golden and the filling bubbles.

  • Use a rotisserie chicken for a shortcut without sacrificing flavor.
  • Make sure the filling is bubbly-hot before topping with pastry — it needs to cook the bottom crust.
