The History Behind This Recipe
Chicken pot pie traces its roots to medieval English meat pies, but the American version — a creamy stew of chicken and vegetables tucked under a flaky crust — became a weeknight hero in the 20th century, especially after frozen versions made it a pantry staple. Homemade, it’s the platonic ideal of comfort: warm, rich, and deeply satisfying on a cold evening.
Ingredients (6 servings)
- 1 lb (450g) cooked chicken, shredded or cubed
- 1 sheet puff pastry (or 1 pie crust)
- 3 tbsp butter
- 1 small onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 1/3 cup (40g) all-purpose flour
- 2 cups (480 ml) chicken broth
- 1 cup (240 ml) milk
- 1 cup frozen peas
- 1 tsp dried thyme
- 1 egg, beaten (for brushing)
- Salt and black pepper, to taste
Instructions
- Heat the oven to 400°F (200°C).
- Melt the butter in a large oven-safe skillet. Cook the onion, carrots, and celery until softened, 6–7 minutes.
- Stir in the flour and cook 1 minute. Whisk in the broth and milk and simmer until thickened, 4–5 minutes.
- Stir in the chicken, peas, thyme, salt, and pepper. Cook 2 minutes more.
- Drape the pastry over the filling, tuck in the edges, and cut a few slits for steam.
- Brush with the beaten egg and bake 25–30 minutes, until the crust is golden and the filling bubbles.
Tips & Variations
- Use a rotisserie chicken for a shortcut without sacrificing flavor.
- Make sure the filling is bubbly-hot before topping with pastry — it needs to cook the bottom crust.
- Let it rest 10 minutes before serving so the filling sets.

Note
Rotisserie chicken makes this recipe much faster on busy weeknights. Brushing the top crust with egg wash gives a beautiful golden shine, and diced potatoes make the filling even heartier.Frequently Asked Questions
