- Boil the tripe in a large pot of salted water for 30 minutes; drain, rinse and cut into smaller pieces.
- In the same pot, heat the oil and cook the onion, garlic and bell pepper until soft, about 5 minutes; add the tripe, cumin, oregano, salt and pepper.
- Pour in the water or broth, bring to a boil, then simmer covered until the tripe is tender, about 1 hour.
- Add the ñame and yuca and cook 15 minutes, then add the plantain and cabbage and simmer until all are tender, about 15 more minutes.
- Stir in the culantro, simmer 5 minutes, adjust the seasoning and serve hot with lime wedges and white rice.

Tripe must be simmered until truly tender — when in doubt, cook it longer. Clean it well and blanch it first; that removes any strong smell and keeps the broth clean.
