Chouriço Assado is a celebration of smoke and fire — Portuguese chouriço sausage grilled, flambéed or roasted until the casing blisters and the fat renders into something almost caramelized. It is more ritual than recipe, a scent that pulls people toward the table.

Often cooked tableside in clay bowls doused with aguardente and set alight, it turns dinner into theater. Serve it sliced on rustic bread with olives and pickled peppers as a starter, or alongside a hearty main — it disappears quickly either way.

Step by stepInstructions

  1. Prick the chouriço lightly, brush with olive oil and dust with smoked paprika.
  2. Grill over medium-high heat, or roast at 400°F, turning often, until blistered and cooked through, 10-15 minutes.
  3. To flambé: warm the aguardente in a small pan, ignite it, and pour the flames over the sausage in a clay dish, letting them die down naturally.
  4. Slice thickly and serve with bread, olives, pickled peppers, lemon wedges and parsley.

💡 Chef tips & storage

Don't prick too deeply or the juices escape. If flambéing, stand back and use a long match — the flames are dramatic but brief.
