Step by stepInstructions

  1. Heat 2 tablespoons of the oil in a large wok or skillet over high heat. Stir-fry the shrimp until pink, about 2 minutes, and set aside.
  2. Add the chicken liver to the pan and cook until browned, about 3 minutes. Set aside with the shrimp.
  3. Add the remaining oil, then the onion, garlic, and scotch bonnet. Cook for 2 minutes.
  4. Add the mixed vegetables and stir-fry for 3 to 4 minutes, until crisp-tender.
  5. Sprinkle in the curry powder, thyme, bouillon, salt, and white pepper, then add the chilled rice. Toss and stir for 5 minutes, breaking up any clumps.
  6. Drizzle in the soy sauce and return the shrimp and liver to the pan. Toss everything for 2 more minutes.
  7. Serve hot, straight from the wok.
