Cheung fun, the silky steamed rice noodle rolls, is the gentlest dish on the dim sum cart — soft white sheets rolled around shrimp, beef, or nothing at all, slicked with sweet soy sauce. Cantonese cooks steam a thin batter in a flat pan, roll it while it is still warm, and serve it with a brush of sauce. At home, a wide skillet and a steamer do the job beautifully. Work in small batches; the batter needs a hot, well-oiled pan.

Soft as silk, with a sweet soy shine

The rolls should be impossibly soft, almost melting, with just enough body to hold their shape around the filling. The sauce is the quiet star: light soy, a little sugar, a drop of sesame, warmed until glossy. Scallions and sesame seeds on top, and the whole plate vanishes faster than anything else on the table. Step by stepInstructions

  1. Whisk the rice flour, wheat starch, cornstarch, water, salt, and oil into a smooth batter; let it rest 20 minutes.
  2. Combine the soy sauce, sugar, sesame oil, and 1/4 cup water in a small pan and warm until the sugar dissolves; keep warm.
  3. Bring a wide steamer to a boil. Brush a flat metal tray or pie plate with oil and pour in a thin layer of batter, tilting to cover the bottom.
  4. Steam for 3 minutes, until the sheet is set and blistered. Sprinkle a few shrimp over one end while still hot.
  5. Loosen the sheet with a spatula, roll it up around the shrimp, and transfer to a plate. Repeat with the remaining batter.
  6. Brush the rolls with the warm sauce and scatter with scallions. Serve hot.

💡 Chef tips & storage

Keep the batter thin — a thick sheet turns gummy. A 9-inch round cake pan works well if you don't have a flat steaming tray.
