Makizushi, the rolled sushi of thin nori sheets wrapped around seasoned rice, began as a fast-food snack at Edo’s sushi stalls in the early 1800s. Vendors rolled leftover fish and vegetables into rice so laborers could eat with their fingers, and the shape has barely changed since.
