Yam nua is the Thai salad that proves a salad does not need to be light or leafy. Grilled or pan-seared beef is sliced thin and tossed, while still warm, with a sharp dressing of lime juice, fish sauce, and chilies. It belongs to the Thai family of yam dishes, pounded and tossed salads served at family meals and festive gatherings across the country.

Warm beef, cold crunch, bright dressing

The beef stays juicy and pink in the middle, soaking up the tangy dressing, while shallots, mint, and cilantro keep every forkful fresh and herbaceous. Cucumber and cherry tomatoes add cool crunch, and a dusting of toasted rice powder brings a nutty finish. It is a complete meal on its own, or a spectacular companion to jasmine rice. Keep the beef slices thick enough to stay pink in the middle, and toss everything only at the last minute so nothing goes soggy.

Step by stepInstructions

  1. Rub the steak with the oil and season with a pinch of salt. Heat a grill pan or cast-iron skillet over high heat.
  2. Sear the steak for 4 to 5 minutes per side for medium-rare, or to your liking. Rest for 5 minutes, then slice thin against the grain.
  3. Whisk the lime juice, fish sauce, and palm sugar in a large bowl until the sugar dissolves.
  4. Add the warm sliced beef, chilies, and shallots and toss to coat in the dressing.
  5. Add the mint, cilantro, tomatoes, and cucumber and toss gently.
  6. Transfer to a platter and sprinkle with the toasted rice powder. Serve immediately.

💡 Chef tips & storage

Slice the beef thin against the grain while it is still slightly warm so it absorbs the dressing. If you cannot find Thai chilies, a pinch of chili flakes works in the dressing.
