  4. Chill the skewers for 30 minutes so they hold their shape.
  5. Grill or pan-sear over medium-high heat, turning often, until browned and cooked through, about 8 to 10 minutes.
  6. Meanwhile, soften the rice paper wrappers in warm water and lay them on plates.
  7. Serve the skewers with rice paper, lettuce, herbs, and nuoc cham for wrapping and dipping.
