Bacon Egg and Cheese Sandwich — crispy bacon, fried egg and melted cheese on a toasted roll

The bacon, egg, and cheese on a roll is the undisputed king of New York bodega breakfasts — a simple, glorious stack of crispy bacon, a soft fried egg, and melted American cheese on a toasted hard roll. It’s the sandwich that gets New Yorkers through the morning, wrapped in foil and eaten on the go.

Chef Emily presents Bacon Egg and Cheese Sandwich

The bodega classic, done right

Crisp bacon, a runny-yolk egg, and gooey cheese on a roll that holds it all together — a few ingredients, one perfect breakfast sandwich.

Step by stepInstructions

  1. Heat a skillet over medium heat and cook the bacon until crisp, about 4-5 minutes per side. Drain on paper towels, leaving the fat in the pan.
  2. Crack the egg into the hot bacon fat and fry until the white is set but the yolk is still soft, about 2 minutes. Season with salt and pepper.
  3. Split the roll and toast the cut sides in the pan until golden, about 1 minute.
  4. Place the cheese on the egg and let it melt for 30 seconds, then stack the bacon on top.
  5. Transfer the egg-and-bacon stack onto the roll, add ketchup or hot sauce if you like, and serve hot.

💡 Chef tips & storage

Use a hard roll or kaiser roll — it holds up to the fillings. Cook the egg over-medium so the yolk stays soft, and wrap the finished sandwich in foil for a minute so the cheese melts into every bite.
