  1. Preheat the oven to 375°F and butter a 9x13 baking dish.
  2. Melt 3 tablespoons of the butter in a skillet and cook the onion and celery until soft, about 5 minutes.
  3. Stir in the breadcrumbs, thyme, parsley, paprika, salt, and pepper; cook 2 minutes, then add the lemon juice and toss to moisten.
  4. Arrange the haddock in the dish, pile the stuffing over each fillet, and pour the broth around the fish. Dot with the remaining butter.
  5. Bake 20-25 minutes, until the stuffing is golden and the fish flakes easily.

💡 Chef tips & storage

Use slightly stale bread for the stuffing — it soaks up butter without turning mushy. If the tops brown too fast, cover loosely with foil.
