In Sichuan, this dish is called shuizhu yu, which translates to water-boiled fish, though the fillets actually poach in a red-hot chili broth. It is the fish version of the famous water-boiled beef, and it is the dish many locals say shows off their chili oil best. The best versions are made at home, where you control the heat and the quality of the fish, and asking your fishmonger for a firm white fish gets the dish half done.

The fillets are marinated with egg white and cornstarch so they turn out silky and white, while bean sprouts catch the broth underneath. The finale is the same as every great shuizhu dish: a ladle of smoking oil poured over chilies and peppercorns that perfumes the whole table. Every bite of fish comes with a ribbon of bright, numbing heat, and the broth alone is worth the price of admission.

Step by stepInstructions

  1. Marinate the fish slices with the egg white, cornstarch, wine, and salt for 20 minutes.
  2. Blanch the bean sprouts for 1 minute in boiling water, drain, and spread them in a deep serving bowl.
  3. Heat 1 tbsp vegetable oil in a wok over medium heat. Cook the doubanjiang, ginger, and half the garlic until the oil is red and fragrant, about 2 minutes.
  4. Add the stock and soy sauce and bring to a simmer. Gently lower the fish slices into the broth and poach until opaque, 1 to 2 minutes.
  5. Pour the fish and broth over the bean sprouts, then top with the remaining garlic, the chilies, and the peppercorns.
  6. Heat the remaining 3 tbsp oil in a small pan until it shimmers and pour it over the chilies so they crackle.
  7. Serve at once, straight from the bowl.

💡 Chef tips & storage

Use a firm white fish like cod, tilapia, or sea bass so the slices hold together in the broth. Slice the fillets against the grain into 1/4-inch pieces for the most tender result.
