No South African braai is complete without a stack of braaibroodjies sizzling on the grid next to the meat. The name simply means braai sandwiches, and the formula is sacred: white bread, butter, cheese, tomato, onion, and a good spoonful of fruit chutney, grilled until the bread is toasted and the cheese melts through. Simple as they are, they are the first thing to disappear from the table.

The bread turns golden and crisp on the grill while the cheese melts into the tomato and onion, and the chutney adds a sweet-sour kick in every bite. Cooking them over the coals gives a faint smokiness that a stovetop pan simply cannot match. Cut them on the diagonal and serve hot, with extra chutney on the side.

Step by stepInstructions

  1. Butter one side of each slice of bread and flip the slices so the buttered side faces down.
  2. On four of the slices, layer the cheese, tomato slices, onion, salt, and pepper.
  3. Spoon the chutney over the filling, then top with the remaining bread slices, buttered side up.
  4. Place the sandwiches on a grill or grill pan over medium heat.
  5. Grill for 3 to 4 minutes per side, pressing gently, until the bread is golden and crisp and the cheese is melted.
  6. Remove, rest for 1 minute, cut on the diagonal, and serve hot.

💡 Chef tips & storage

Butter the outside of the bread and build the filling inside, then grill over medium coals so the cheese melts before the bread burns. Use a cooling rack or flipper to press them gently while grilling.
